I would like to use the white Gnome Shell Theme (the one used during the gnome-classic session) during a normal Gnome 3 session. Is it possible ?

Have you try the option in the Tweak tool : Appearance tab > Global Dark Theme = Off ? The top line remains dark but the applications are white.

From the GDM login screen, click the "gear" and select the GNOME Classic desktop session. That creates a traditional GNOME 2 style desktop, with a top panel and bottom panel.
