yum install plymouth-theme-hot-dog has always made it take effect, maybe you could do that in %post. I don't know why you'd install any other theme.

"don't work" isn't very descriptive. What does the log file from the kickstart run say? As randomuser says, maybe the theme you are referring to isn't installed? Maybe you didn't chroot correctly? Log files will be very helpful here.

Adding the following to you %post script should work. It worked for me under FC23.

plymouth-set-default-theme mytheme -R
dracut -f

I tried the same in FC27. But it didn't work for me. I added the following after %post in my kickstart file.

plymouth-set-default-theme tribar -R
dracut -f

But after building the iso, it boots with default 'charge' plymouth.
