I use Fedora28 for both purposes: server and workstation. Can I just pick one or the other from the list shown at startup? or do I need to dual boot these two versions of Fedora28?
The various flavours of Fedora (server, workstation, spins, sigs) are just a subset, a selected collection of packages from a larger pool of packages. Fedora Server (or Workstation) is actually a pre built installation image which contains only a selection of software useful in a server (desktop) like scenario. Does a server need a graphical stack and a DE? Probably not so Xorg is not in the server image. Does a typical desktop user need to run a database engine? Probably not so mariadb is not in the workstation image. Should a need arise for your wife to run a local static website? sudo dnf install httpd.
You can use Workstation and install the services you need to run as server, for example if you use it as lamp server you could install apache, php and mariadb on the same machine to work out. Of course if you use this machine as workstation and want to isolate the services you could visualize or use docker for your server part.
