You can use PlayOnLinux -- it's a simple application that allows you to have multiple versions of Wine, special configuration for every application running in Wine etc.

PlayOnLinux is available through Fedora repositories, so you can install it from GNOME Software or using sudo dnf install playonlinux.

You can try to use sudo dnf downgrade wine or clone the the git tree git clone, cd wine and checkout the version git checkout tags/wine-1.8.5 . Afterwards you need follow this 'guide' and compile it yourself. The latter can be really tricky for a GNU/Linux novice especially because you need to find out which depencies are needed. I would try the first option or wait /report to Wine and maybe the Fedora bugtracker until your problems are fixed in the newer version.
