Not exactly sure how you are not setting the root password.

In the "second hub" of anaconda, there should be an Root Password option there where you create the root password for your installation:

Note that even if you don't set it there, you should also be able to set up the root password during firstboot (the screens that show up after you reboot after install)

Also, in firstboot, when you create your normal user, you should be able to "Set as Administrator" to give it sudo access.
