Where to find Definition of standard programs/applications in Gnome?

When I try to define the standard applications for Web, Email, Calendar, ... in Gnome (Fedora 22), I can select only from a given list of programs. How can I extend that list to programs that are not yet listed there but installed on my system?

Copy a .desktop file somewhere? Where is that somewhere?
