I cannon seem to make any changes in alacarte

I want to be able to start chrome in incognito so I installed alacarte. In alacarte I do not have the ability to make changes. Notice how the "ok" is grayed out http://imgur.com/wUt5MMV

Alacarte knows to be silly sometimes, especially if you typed something after the /usr/bin/google-chrome-stable in the command field. I would suggest creating shortcut without any additional switches and then editing it "by hand".

File should be located in ~/.local/share/applications/something.desktop. Open up that file with your favorite text editor and edit line that begins with:

 Exec=/usr/bin/google...

they are youtube, gmail, docs,, etc

Oh sorry, apparently I misunderstood your question again. So you basically want to change chrome launcher to automatically start in incognito mode and not have separate icon/launcher/shortcut for that.

To do that you'll need to edit file in /usr/share/applications and for that you'll need root rights:

sudo gedit /usr/share/applications/google-chrome.desktop

Find the line containing:

Exec=/usr/bin/google-chrome-stable %U

and replace it with:

Exec=/usr/bin/google-chrome-stable --incognito %U

BTW, my first answer was made on the assumption that you created additional shortcut via Alacarte for Google Chrome but you can't add switch to start it in incognito mode.
