When I press my laptop's disable/enable touchpad button (Fn-F6 on my Lenovo), Gnome3 disables (or enables) the touchpad. However upon reboot, the touchpad resets to being disabled.

Is there any way of the touchpad's state being remembered after a shutdown/reboot?

I seem to recall other distros doing this, is this a feature of Gnome3 that can be turned on?
