Gdisk showing huge LVM2 partition. What is this LVM2 partition? Why is it so huge? Should I make it small and how?

Contents of those block devices you have in /dev/mapper are stored in that LVM volume. Unless you want to make them smaller, you should not make the LVM2 volume smaller either.
