You have to click the gear symbol on the login screen, there should be what you are looking for.
When i click the gear symbol at the login screen (F25, upgraded from 23) i can select: * gnome (with no remarks, which means it uses wayland) * gnome classic * gnome under Xorg
(the latter 2 are non-wayland)
